3-4 heads of Snow Mushroom (dry) also know as Snow White Fungus – Nấm Mèo Trắng
1 lb of cook shrimp – cook, peel, de-vein then split in half (can substitute with other meats)
2 carrots – peel then shred
1 tsp of black pepper
1 tbsp of pink salt
1 cup of roasted peanut
Cilantro – finely mince
Peppermint – finely mince
We use this brand:
After soaking snow mushroom in cold water for 30-45 minutes to re-hydrate, dry them well then cut as instructed make sure to toss away the yellow end stock. Put in the shredded carrots then hand squeeze them as much as possible to remove all moisture (the drier the salad the crunchier they will be). Put in shrimp, cilantro, peppermint and crushed roasted peanuts then seasoned to taste. Mix or toss the salad well before squeeze in limes juice. Plate and garnish with the rest of crushed roasted peanuts. Voilà, a simple, quickly prepared Snow White Mushroom Salad the whole family can enjoy!
