– 1l soy milk (no sugar added)
– 100g sugar
– 100ml yogurt starter (room temperature)
1. Mix 500ml soy milk with 100g sugar. Dissolve the sugar. Simmer on low heat for 25 minutes to reduce in half.
2. Let it cool down for 10 minutes. Mix in remain 500ml soy milk. Mix well.
3. Stir in gently yogurt starter.
4. Put the milk mixture in glass jar. Ferment at 40-44C for 6-8 hours.
5. Store in the fridge 1 day before serving.
